Everything else is portioned for a working day. Food that holds its temperature on a counter, that does not need a knife, and that people can eat and then go back to a desk without regretting it.

An office is not a banquet hall and should not be fed like one. The dish count comes down, the serving format comes up, and every plate is marked so nobody has to ask what is in it.
