Eight kinds of occasion, one approved kitchen list, and a menu checked against the rules your event carries before it reaches you.
Most caterers keep one spread and rename it for each occasion. We keep one kitchen list and build a different menu from it every time, because a puja bhog, an office lunch and a wedding are three unrelated problems that happen to involve rice.
Every dish we cook is recorded with what it contains, how it behaves in volume, and which occasions it belongs to. When you tell us the event, the dishes that do not belong are removed before the menu is built rather than filtered out at the end.
